Impress Your Guests with Fancy Chips & Guacamole March 8, 2010

It’s always nice to prepare something tasty and quick when guests are coming over. With this unique recipe, you will be able to impress your friends with your culinary skills, and enjoy a delicious version of the often dull guacamole. So throw out the pre-made guacamole mix, check the kitchen for needed ingredients, and get started!

You will need

1/3 of a cup of green pepper
1/3 of a cup of red pepper
3 Ripe avocados
1 Tomato
Juice of 1.5 limes
Garlic salt to taste or just regular salt
1/4 Cup of freshly chopped cilantro
2 teaspoons of sweet yellow onions (a very little amount just to give some flavor)
3 Teaspoons of honey
3 teaspoons of reduced pomegranate juice

1. Chop the 2 tablespoons of onion and squeeze 1.5 limes into a large bowl.  Add 3 pinches of garlic salt. Allow to rest in the bowl for about 5 minutes while you prep the other ingredients

2. Chop the 1/3 cup of red pepper and green pepper and set aside. Be sure to chop them into really small cubes

3. Chop the 1/4 cup of cilantro and set aside

4. Chop the 1 tomato into small cubes and put it inside the bowl with the onions in it

5. Put the chopped peppers into the bowl and allow to rest for another few minutes, while we make the pomegranate/honey glaze

6. If you have pomegranate juice, simply cook it over medium heat for about 5 minutes in a pot until it becomes thicker. Take 3 teaspoons of the reduced pomegranate and mix it with 3 teaspoons of honey. Make sure it has a thick consistency, and taste to make sure it is a good sweet/tart combination, as flavors of honey and pomegranate can vary

7. Chop up the avocado, and place into the bowl along with the cilantro

8. With a fork, mix the bowl from the bottom, and mash the avocados gently. Do not make it into a puree, as you will see that it both looks and tastes much better when the avocados retain some of their chunky texture

9. Place on a large serving plate, and pour some of the honey/pomegranate glaze on top. Serve with plain chips. Enjoy!
